My husband and I love to vacation on the historic California coastline. Two of our favorite places are Monterey Bay and Pacific Grove. A few years ago, during one of our stays at the beautiful Centrella Inn, we enjoyed a delicious complementary breakfast. It included a fruit and yogurt parfait. Ever since that trip yogurt parfaits are a staple in my life.
I have tried many different store-bought granolas overtime and aquired a few favorites until one day I decided I was going to make my own. Once I did, it was hard to go back. I tried new recipes, tweaked a few things and settled on this mix-matched recipe as my new go-to!
It is crunchy, flavorful and packed with nutrition. Your house will smell amazing as it bakes in the oven.
Good luck trying to stay out of it. My recommendation is to always make a double batch. It is such a fun gift to give away in a jar to friends, family and neighbors. But I don’t think you’ll have any problem eating all of it by yourself.

Ingredients:
- 2 cups organic rolled oats
- 2 cups nuts of choice (I use 1 cup almonds, 1/2 cup pecans, 1/2 cup pistachios)
- 1/3 cup organic maple syrup
- 1/4 cup organic coconut oil
- 2 tsp cinnamon
- 1 tsp vanilla
Instructions:
- Line a baking sheet with parchment paper and preheat your oven to 300°
- Mixed the oats, nuts and cinnamon together in a bowl
- In a separate microwave-safe bowl add the coconut oil and microwave until it has completely liquified. Then add the maple syrup and microwave again until it reaches a light boil. Add in the vanilla and stir
- Pour the wet ingredients into the dry ingredients and stir to coat evenly
- Transfer the granola onto the sheet pan spreading into a thin, even layer
- Bake the granola in the oven for 25 minutes
- Remove the granola from the oven and let it cool completely on the pan (this is when the granola will become crunchy).
- Once it is completely cool, transfer to an airtight container.
- Enjoy!
