Summer Berry Icebox Cake: Memorial Day Edition

As Summertime begins, the weather heats up and Memorial Day approaches, I find myself anticipating all the seasons’s celebrations.

Summer means long, hot days filled with back porch barbecues, swimming pools, ice cream, the sound of children playing and thoughts of fresh-picked berries. It includes celebrating Memorial Day, the 4th of July and all things red, white and blue.

To kick off summer and celebrate Memorial Day, I wanted to share an absolutely delicious recipe I found last year on Cakescottage. I made this recipe a few times for different gatherings and it was a HUGE hit each time.

The first time I made it, I decorated the top just like they did in the original recipe. Here is the picture. It not only looked amazing, but it was equally delicious!

The second time I made this recipe it was for a 4th of July gathering. At the creative advice of a sweet friend, I decorated the top of the cake as the American Flag. I loved the way it turned out and it was perfect for the Independence Day celebration.

I think this Summer Berry Icebox Cake is great for any summer celebration. From Memorial Day to the 4th of July – and honestly anytime in between. You just can’t go wrong!

Here is the amazing recipe!

Ingredients:

19 oz graham crackers

8 oz cream cheese, softened

2 (3.4 oz) packages vanilla instant pudding

2-1/2 cups cold milk

12 oz Cool Whip (or homemade whipped cream)

3 cups fresh strawberries, sliced

1-1/2 cups fresh blueberries

2 oz white chocolate chips

Instructions:

  1. Using a mixer, beat the cream cheese and dry pudding mix in a large bowl until blended.
  2. Gradually beat in the milk.
  3. Carefully stir in the Cool Whip, reserving ½ cup.
  4. Spread a thin layer of the ½ cup reserved cool whip in a 9×13 pan just to coat the bottom.
  5. Place one layer of graham crackers across the entire pan, breaking them as needed to fit around the edges.
  6. Next, spread a layer of pudding mixture over the graham crackers and top with a layer of blueberries and sliced strawberries.
  7. Place another layer of graham crackers on top of berries, then pudding mixture, then layer of berries again.
  8. Repeat the steps of layering the graham crackers, pudding and berries until you reach the top of the pan.
  9. Refrigerate for a minimum of 4 hours (or overnight) until the graham crackers have softened completely.
  10. Melt the white chocolate chips in a bowl as directed on the package and drizzle over the dessert.(You can use a spoon to drizzle it over the tops of the berries or you can put it into a small zip-lock bag and snip the corner for an easy “piping bag.”)
  11. Keep refrigerated and serve cold.
