Valentine’s Day Peanut Butter Truffles

What says love better than chocolate and peanut butter? I think the two were always made to go together. Don’t you? I wanted to share a favorite recipe with you that I have made countless times. It never, ever, ever disappoints.

Peanut Butter Truffles

Ingredients:

1 cup peanut butter

1 cup butter, softened (2 sticks)

1 lb powdered sugar

12-13 gram crackers (about 1 1/2 packages)

1 lb dipping chocolate

Valentine’s Day sprinkles

Instructions:

  1. Crush the gram crackers into small crumbs by placing them in a ziplock bag and rolling them with a rolling pin (you can also use a food processor for this step).
  2. Add crushed gram crackers to a bowl and then add the softened butter, powdered sugar and the peanut butter. Mix together thouroughly.
  3. Line a sheet pan with waxed paper, and using a 1 1/2 inch cookie scoop, spoon out some of the mixture and roll into a ball using your hands.
  4. Place formed balls on the pan and set them in the fridge for just about 20 minutes to firm up.
  5. Melt your dipping chocolate (I use a “Chocolate Pro” plug-in warmer and it works great).
  6. Dip the peanut butter truffles in the melted chocolate one at a time, placing them back on the wax paper and then sprinkling with your choice of sprinkles.
  7. You can place the chocolate dipped truffles back in the refrigerator after dipping to accelerate the hardening process, if you’d like.
  8. Package, display and enjoy!

*These truffles can be stored in an air tight container for up to 5 days and are also wonderful cold (if you want to store them in the fridge).

*One batch makes about 40-45 truffles and the recipe can always be doubled – the more the better, I say!

Mmm, mmmm, mmmmmmmmm!

Gather your ingredients
Crush gram crackers into small crumbs. You can do this with a food processor or by placing the gram crackers in a ziplock bag and rolling with a pin.
Mix together the butter, peanut butter, powdered sugar and gram crackers crumbs.
Roll the mixture into balls and place them in the refrigerator for 15 -20 mins to firm up and chill.
Melt your dipping chocolate and dip the peanut butter truffles in one at a time – placing back on the wax paper to cool and harden.
Yum!
These are so fun to make…and delicious to eat!
Package and deliver! These truffles went to a group of friends.
